If I were to hazard a guess as to what specifically <em>emet</em> ("truth") refers to on the Golem's forehead, I'd say it might be a response to the Christian blood libel accusations. In other words, the blood libel charge is a lie and the Golem is sent to defend the Jews and thus disprove the lie. So in this sense, the Golem represents the Jewish people as it would wish to be seen by non-Jews; and not as butchers of Chrisitian babies, which is the lie that Christians promote about Jews.
